1. For the pesto, place basil leaves, olive oil, garlic, pine nuts, parmesan, salt/pepper and lemon into a small food processer or grinder and mix together until all ingredients have pureed. Note, if you feel your pesto is too thick, add a little more olive oil.
  2. Then, in a large pot of boiling salted water, cook San Remo Fibre Fest according to packet directions; drain well.
  3. Heat olive oil in a large pan over medium heat. Season chicken in a bowl with salt and pepper. Place the chicken in pan and cook until golden (approx. 3-5 minutes each side), set aside.
  4. In a large bowl combine cooked pasta, chicken, tomatoes and homemade pesto.
  5. Place into meal container or bowl, garnishing with parsley and a little extra parmesan. Enjoy!
