Method

  1. Cook the pasta following the directions on the packet.
  2. In a frying pan heat the olive oil in a medium heat, add the anchovies and cook gently until melted into the oil, add the garlic and chilli and remove the pan from the heat. Leave aside until the pasta is cooked.
  3. 30 seconds before straining the pasta from the water add the ribbons of vegetable, then strain and add into the anchovy oil fry pan. Return to the heat and gently mix the pasta through the oil. Taste and check seasoning. Remove from the heat, add the cheese and tarragon and gently mix through the pasta.
  4. Serve.
