1. Preheat oven to 180°C.
  2. Toss the prepared vegetables and garlic with 1 tablespoon of olive oil then place into a roasting pan.
  3. Roast for 35-40 minutes or until cooked.
  4. Remove garlic and allow to cool, keep remaining vegetables warm.
  5. Cook the pasta in boiling water as per packet instructions. Drain.
  6. Once garlic is cool, remove tops and squeeze the cloves out into the serving bowl and crush to form a paste, and then mix with remaining olive oil and basil.
  7. Toss the pasta and hot vegetables in prepared garlic and basil oil.
  8. Add salt and pepper to taste.
