Place the CousCous in a glass jug and pour boiling water over it so it is covered and there is an extra cm of water above the CousCous. Cover with a plate and set aside.

To make the dressing mix oil, vinegar, lemon juice, lemon zest, white pepper and salt. Stir well to combine.

In a large bowl mix the cucumber, tomato, parsley, red onion. Add the dressing and toss.

Using a fork, gradually fluff the cooked CousCous into the bowl with the other ingredients, removing any lumps. Stir to combine.

Transfer to a serving bowl or platter and enjoy as a delicious side dish. Serve and enjoy with family and friends!
