Ready Pasta Penne with Roast Pumpkin, Ricotta & Spinach

Ingredients
250g San Remo Penne Ready Pasta
2 cups roasted pumpkin
200g baby spinach
100g ricotta
4 tbsp olive oil
1/2 lemon, juiced
Sea salt & cracked black pepper
Method
Place the pumpkin in a bowl and reheat in the microwave.
Heat penne as per packet instructions and add to the pumpkin.
Add the spinach and stir to allow the heat to wilt the spinach.
Crumble in the ricotta and toss through.
Add olive oil, lemon juice and season with salt and pepper.
Stir well, serve and enjoy with family and friends.
