Method

  1. In a pot of boiling salted water, add the pasta and cook as per packet directions.
  2. In a large sauté pan, heat the olive oil and butter, add the shallots and gently fry off.
  3. Add the lemon zest, garlic and dried chilli. Cook for 1 minute then remove the mixture from the pan.
  4. Place the chorizo slices, fry off for 3 minutes and then add the white wine. Return the shallot mixture to the pan.
  5. Add fresh oregano and prawns, stirring until just cooked. Sprinkle with parsley and finish with reserved pasta water to bring together as a sauce.
  6. Toss the pasta through and serve with a generous squeeze of fresh lemon juice.
  7. Serve and enjoy with family and friends!
