1. In a pot of boiling water, cook pasta as per packet directions.
  2. Heat olive oil in a pan on medium heat. Add onion, garlic and chilli and cook for 5 to 7 minutes or until onion is soft.
  3. Pour tomato paste into pan and cook for 2 minutes.
  4. Deglaze pan with vodka and turn down the heat to simmer.
  5. Add cream and combine.
  6. Remove garlic and chilli.
  7. Add cooked pasta to the sauce and mix in parmesan and pecorino. Turn off the heat and season with salt and pepper.
  8. Garnish with basil leaves before serving and enjoying with family and friends.
