Heat olive oil in a large saucepan, add onion, carrot and parsley and cook on medium heat for 5 minutes. Stirring occasionally.

Add meat into pan and cook for 8 minutes until meat is browned, continue to stir.

Add 1 cup of water to pan and reduce by half.

Stir in tomato, season with salt and pepper, cover and simmer for 15 minutes

In a pot of boiling salted water, add pasta and cook as per packet directions.

Add cooked pasta to the pan and stir to combine.

To finish, garnish with parmesan.
