In a pot of boiling salted water, cook pasta as per packet directions.

To make the crunchy crumb topping, add 2 tbsp of olive oil to a frypan on medium heat.

Add the breadcrumbs, garlic, salt, pepper and parsley and stir to combine. Remove from the pan and set aside when the mixture has become crispy and golden.

To make the spicy garlic prawns, add half the butter and 2 tablespoons of olive oil into a frypan along with the garlic & chili and begin to fry off for a minute on a low heat.

Turn the heat up to high, add the prawns and allow to cook for 30 seconds.

Working quickly to avoid overcooking the prawns, add the tomatoes by crushing them between your hands and the white wine and reduce the wine by half.

Add the cooked pasta with some of the cooking water, the remaining butter and sprinkle the pasta with the crunchy crumb topping.
