For the Sauce


  1. To make sauce, heat the oil in a large saucepan, add the onion and stir over low heat until onion is transparent.
  2. Add wine, bring to a boil and simmer over medium heat until reduced by half. Add cream and stir over medium heat for 5 minutes.
  3. Place butter in a food processor and pour in cream mixture while motor is running. Process until smooth.
  4. Add lemon juice and process until combined. Set aside.
  5. Cook pasta in a large pan of water until al dente. Drain.
  6. Heat oil in a large saucepan, add chilli and garlic and stir-fry over medium heat for 1 minute.
  7. Add crab meat, pasta and cream sauce and heat through.
  8. Season to taste, divide into serving bowls and sprinkle with chives.
