Moroccan CousCous with Dried Fruit and Nuts

Ingredients
300g San Remo CousCous
1 tsp salt
2 tsp sugar
1 tbsp sunflower oil
1 tsp cinnamon, ground
1/4 tsp nutmeg, ground
Zest of 1 orange
1 tbsp orange juice
50g slivered almonds, lightly toasted
50g raw pistachios, chopped
100g mixed dried fruit, diced (eg. sultanas, currants, apricots, figs)
Handful of fresh mint, finely chopped
Method
Prepare CousCous as per packet instructions with added salt. Once cooked, fluff with a fork and set aside.
Add sugar, sunflower oil, cinnamon, nutmeg and orange zest and juice to the bowl and mix well with CousCous.
Cut dried fruit into smaller pieces, then mix into bowl.
In a medium frypan, lightly toast almonds until golden. Stir toasted almonds and chopped pistachios into the CousCous.
Sprinkle with chopped mint and toss again.
Serve and enjoy with family and friends!
