  1. Cook the pasta in salted water until just al dente, then rinse under cold water to stop the cooking. Drain well.
  2. In a large bowl, whisk the mascarpone with lemon juice, zest, a drizzle of olive oil, and seasoning until smooth.
  3. Add the pasta, cucumber, onion, capers, and dill. Toss gently to coat.
  4. Fold in the smoked salmon just before serving.
  5. Taste for salt and finish with a touch more lemon and oil. Serve chilled and enjoy with family and friends.
