Method

  1. Combine CousCous, onion and ginger in a large bowl. Pour over boiling water, stir and cover. Stand for 5 minutes and fluff with a fork.
  2. To CousCous add beans, capsicum, avocado, dill and spring onion.
  3. Put lemon juice, oil and garlic in an old jar and shake until combined or whisk well in a bowl. Coat the CousCous with liquid and sprinkle with pistachios and baby spinach before serving with extra lemon wedges.
