1. In a pot of boiling salted water, add pasta and cook per packet instructions.
  2. Meanwhile, heat a pan on low, add guanciale and olive oil.
  3. Cook for 5 minutes or until guanciale is crispy and all fat has rendered down.
  4. Add passata, chilli and 1 cup of pasta water to pan and bring to the boil.
  5. Simmer and cook for 8 minutes, add salt and pepper to taste.
  6. Strain pasta and add to pan.
  7. Turn off heat and add butter and halve the amount of pecorino.
  8. Mix and serve with remaining pecorino over the top.
  9. Serve and enjoy with family and friends!
