1. In a large pot of boiling salted water, add the pasta and cook as per packet directions. Reserve one cup of cooking liquid.
  2. Meanwhile, heat oil in large fry pan over a medium heat. Add prawn heads and shells and fry for 2-3 minutes. Remove from pan.
  3. Fry anchovy, garlic, chilli, and basil stems in pan till fragrant. Add cherry tomatoes and cook for another 2-3 minutes or until tomatoes start to soften. Add passata and simmer for 3-4 minutes. Stir in prawns.
  4. Drain pasta, add reserved pasta water, and crème fraiche to the sauce and toss through pasta.
  5. Finish with basil leaves. Serve and enjoy with family and friends!
