1. In a pot of boiling salted water, add the pasta and cook as per packet directions. Drain pasta and reserve ½ a cup of the pasta cooking water.
  2. In a frypan on medium heat add the butter and allow to soften. Add the Parmigiano cheese, cooked pasta, a generous amount of cracked black pepper along with ½ a cup of the pasta cooking water. Combine well ensuring the pasta is coated in the sauce.
  3. Season with salt and divide between serving bowls. Sprinkle with extra Parmigiano cheese, pepper and drizzle with extra virgin olive oil.
