Hot Cross Bun Topping


  1. Preheat the oven to 180°C.
  2. Add onion and oil to a large saucepan over a high heat and sauté for 3 minutes.
  3. Add cauliflower and garlic and sauté for 5 minutes or until fragrant.
  4. Reduce heat to medium and add vegetable stock, miso paste and mustard. Stir until combined.
  5. Cover saucepan and allow cauliflower to cook for 20 minutes or until tender. Check mixture occasionally and top with water if the liquid is evaporating quickly but the cauliflower isn’t cooked.
  6. When the cauliflower is tender and the mixture has slightly cooled, blend the mixture using a high-powered blender or stick blender.
  7. Season cauliflower sauce with salt, pepper and nutritional yeast to taste and set aside.
  8. In a pot of boiling salted water, add the pasta and cook as per packet directions and set aside.
  9. Add hot cross bun to a food processor and pulse until it resembles a fine bread crumb mixture.
  10. Add remaining ingredients, process until combined and season to taste.
  11. In a large oven-safe casserole dish, gently mix the cauliflower cheese with the cooked Macaroni.
  12. Sprinkle Hot Cross Bun topping on the pasta.
  13. Bake for 20 minutes until the surface is golden brown.
  14. Serve and enjoy with family and friends!
