Method

  1. Heat 1 tbsp olive oil in a large pan over high heat. Add chicken, season with salt and pepper, and cook until browned and just cooked through. Remove and set aside.
  2. Add 1 tbsp olive oil to the pan and cook onion, garlic, bacon and chilli for 5 minutes until softened. Add mushrooms and broccoli and cook a further 5 minutes.
  3. Return chicken to the pan. Stir in chicken stock, thickened cream and sun-dried tomatoes. Simmer for 10 minutes, seasoning to taste.
  4. Meanwhile, cook San Remo Bowties until 1 minute shy of packet instructions. Add to the pan and toss to coat in the sauce.
  5. Just before serving, stir through baby spinach until wilted. Sprinkle with parmesan and serve warm.
