For the for Vinaigrette:


  1. Place vinaigrette ingredients in a small bowl and whisk to combine.
  2. Into a pot of boiling salted water, cook pasta according to packet directions. Drain and place in a large mixing bowl.
  3. Pour over vinaigrette, mix gently and allow to cool to room temperature.
  4. Add spring onion, tomato, sun-dried tomato, beans, half the feta, parsley and mint and mix gently.
  5. Spread hummus on the base of a platter and top with pasta salad and a garnish of the remaining feta.
  6. Serve and enjoy with family and friends!
