Rocket Pesto


  1. For the pesto, place all of the pesto ingredients into a food processor and mix until combined.
  2. In a pot of boiling salted water, cook pasta per packet directions.
  3. Heat butter in a large pan on medium heat and add chicken, pancetta and cook for 4 minutes or until cooked and golden.
  4. Add pesto and a little pasta water to help stop it from sticking.
  5. Pour cream and pesto into pan. Reduce heat to a simmer. Cook for a further 3 minutes.
  6. Add strained pasta to the sauce and toss well to combine.
  7. Serve and enjoy with family and friends!
