1. Cook pasta according to packet directions, drain. Set aside to cool.
  2. Grill the capsicum until the skin blackens. Turn to char all sides evenly then remove from heat, cover to steam. When cool, remove the skin and seeds and tear the capsicums into strips.
  3. Lightly season the chicken breast with salt and pepper. Brush with olive oil and grill. Slice the chicken into strips when cool.
  4. Combine all the dressing ingredients in a jar and shake well.
  5. Toss all the ingredients together in a large bowl. Mix in dressing and serve immediately.
