Method

  1. Combine orange juice, orange zest, sugar, cloves, cinnamon, cardamom pods and star anise in a saucepan over low heat. Stir until sugar dissolves. Increase heat to medium-high. Add dried fruit and simmer, uncovered, stirring occasionally for 10 minutes. Set aside to cool slightly.
  2. Place almond milk and salt in a large saucepan. Bring to the boil. Remove from heat and stir in CousCous. Cover and stand for 3 minutes. Add butter and heat over a very low heat for 3 minutes while stirring with a fork to separate grains. Serve with fruit compote and natural yoghurt.
