1. Prepare CousCous as per packet instructions with added salt. Once cooked, fluff with a fork and set aside.
  2. Add sugar, sunflower oil, cinnamon, nutmeg and orange zest and juice to the bowl and mix well with CousCous.
  3. Cut dried fruit into smaller pieces, then mix into bowl.
  4. In a medium frypan, lightly toast almonds until golden. Stir toasted almonds and chopped pistachios into the CousCous.
  5. Sprinkle with chopped mint and toss again.
  6. Serve and enjoy with family and friends!
