Preheat oven to 200°C.

Heat a medium saucepan over medium heat. Add the olive oil, tomato, whole garlic cloves and season with salt and pepper. Bring to the boil, lower heat and simmer for half an hour, stirring occasionally.

Meanwhile, heat a small frypan over medium heat, add olive oil and onion and cook until softened. Add chopped garlic and cook for a further 2 minutes. Allow to cool.

Place mince into a large bowl with the cooked onion mix, breadcrumbs, parmesan, parsley, egg and seasonings. Mix thoroughly.

Roll mince mix into small meatballs and place to fit snuggly into a baking tray in a single layer. Bake for 10 minutes.

Reduce oven to 180°C. Pour the tomato sauce over the meatballs, cover the tray with foil and bake for a further 20 minutes.

Meanwhile, in a pot of boiling salted water, cook pasta as per packet instructions, retaining a small amount of the cooking water.

Place the meatballs and sauce in a large frypan and add the cooked pasta. Toss well to combine, adding some pasta water to loosen the sauce if required.

Garnish with chopped parsley and shaved parmesan.
