1. Place the pumpkin in a bowl and reheat in the microwave.
  2. Heat penne as per packet instructions and add to the pumpkin.
  3. Add the spinach and stir to allow the heat to wilt the spinach.
  4. Crumble in the ricotta and toss through.
  5. Add olive oil, lemon juice and season with salt and pepper.
  6. Stir well, serve and enjoy with family and friends.
