Method

  1. Preheat oven to 200°C.
  2. In a pot of boiling salted water, add the pasta and cook as per packet directions.
  3. Melt butter in a pan, removing from direct heat so it doesn’t burn.
  4. Add flour and cook for 1 minute, stirring constantly.
  5. Next, add milk and tomato paste and continue to stir.
  6. Add mozzarella, parmesan, oregano & chilli, mix until smooth and season with salt and pepper to taste.
  7. Add drained macaroni, stirring until well combined.
  8. To assemble, spoon mixture evenly into baking dish and sprinkle pepperoni over the top.
  9. Place baking dish in pre heated oven and cook for 15 minutes or until pepperoni is crispy and pasta is bubbling.
  10. Serve and enjoy with family and friends!
