1. In a pot of boiling salted water, add pasta and cook as per packet instructions. Once cooked, strain and refresh under cold running water. Set aside.
  2. Heat a pan on medium and dry toast almonds until golden and allow to cool.
  3. In a food processor, add tomatoes, garlic, 1 cup of basil, cheese, and enough oil to blend.
  4. Add salt and pepper to taste.
  5. In a large bowl add pasta, pesto and rocket. Mix together.
  6. To finish garnish with remaining basil over the top.
  7. Serve and enjoy with family and friends!
