1. In a pot of boiling salted water, add pasta and cook as per packet directions. Refresh under cold running water, toss in olive oil and season with salt and pepper. Set aside.
  2. Place red onion into a small bowl and add sugar and vinegar. When the onion turns pink, strain the liquid. This can take approximately 3 minutes.
  3. Mix the dressing ingredients together in a small bowl.
  4. Arrange the salad ingredients onto a serving platter. Top with prawns and drizzle over the dressing and garnish with baby herbs.
  5. Serve and enjoy with family and friends!
