1. In a pot of boiling salted water, cook pasta as per packet directions.
  2. Meanwhile, heat a large fry pan with 5 tablespoons of olive oil. Add prawns and sauté for 5 minutes on medium heat until they turn pink.
  3. Turn down the heat, add garlic and herbs and fry for 1 minute.
  4. Stir in drained spaghetti, parmesan and tomatoes, and mix well.
  5. Remove from heat, and season with salt and pepper to taste.
  6. Arrange in 4 bowls and top with rocket. Drizzle with remaining olive oil.
  7. Garnish with chopped walnuts and finish it off with a dash of balsamic vinegar.
  8. Serve and enjoy with family and friends!
