This Pesto & Garlic Mushroom Pasta using our San Remo Pulse Spaghetti is an easy dinner that can be made quickly and easily with the added bonus of only needing a few pantry staple ingredients plus some sliced mushrooms.

Ingredients

250g San Remo Pulse Pasta Spaghetti
3 tbsp dairy free butter
2 garlic cloves, minced (or 2 tsp of jar crushed garlic)
1 cup mushrooms, sliced
1/3 cup pesto, store bought (gluten free) or homemade
3 tbsps pine nuts
Fresh basil, to serve

Method

In a pot of boiling, salted water, cook pasta as per packet directions.
Meanwhile, melt the dairy free butter over medium heat in a large pan.
Add the garlic and cook for a few minutes.
Add the mushrooms to the pan and combine with the garlic butter. Let cook until the mushrooms are softened and browned on the edges.
When the pasta is cooked, drain and add it to the pan with the mushrooms.
Stir through the pesto until evenly coated.
Serve with fresh basil and pine nuts.
