1. Cook Risoni following the instructions on the packet.
  2. Combine all the diced ingredients and the sliced lettuce in a large mixing bowl. Stir to combine.
  3. Dress the diced ingredients with lemon and olive oil. Season with salt and pepper.
  4. Add the herbs, pine nuts and cooked Risoni, then thoroughly mix together.
  5. Serve on a large plate.
