In a pot of boiling salted water, add the pasta and cook as per packet directions.

Heat a pan on low heat. Add oil and guanciale and cook for 3 to 5 minutes or until guanciale starts to brown.

Place egg and egg yolks, pecorino, parmesan in a bowl and whisk together. Season with salt and pepper.

Add ½ cup of pasta water into the pan, stir to combine. Remove pan from heat and add pasta followed by the egg and cheese mixture. Toss rigorously to combine whilst cooking the egg evenly in the hot pasta. If it starts to scramble, add a little more pasta water.

To finish top with a generous amount of cracked pepper over the top.
