1. Place CousCous in a large bowl, stir in boiling water and cover. Stand 5 minutes and fluff with a fork.
  2. Add cranberries, carrot, mint and pine nuts and season with pepper.
  3. Peel and segment orange - to do this remove white pith. Using a small knife, cut down either side of the membrane to release segments. Add orange to CousCous mixture.
  4. Put orange juice, oil and cumin in an old jar and shake until combined or whisk well in a bowl. Pour over CousCous and mix well.
