1. Heat oil in a frying pan on medium heat and add the garlic and chilli and cook for 1 min.
  2. Add pork mince to pan and cook until browned.
  3. Pour in red wine and cook until wine has reduced by half.
  4. Add peeled tomatoes and cook gently for 10 mins.
  5. Meanwhile, into a pot of boiling salted water, add the pasta and cook as per packet directions.
  6. Remove the cloves of garlic from the sauce and add parsley, butter and half the amount of pecorino to pan. Mix together.
  7. Drain pasta and add to the sauce and season with salt and pepper to taste.
  8. Garnish with remaining pecorino.
