In a small bowl, combine the breadcrumbs, garlic powder, salt, oregano, and paprika. Set aside. Place the flour in a separate bowl and the whisked eggs in another.

Lightly grease your hands with olive oil to prevent sticking. Scoop 3–4 tablespoons of mac and cheese and roll into a ball, then gently flatten into a patty. Place 2 cubes of mozzarella in the centre, then carefully enclose and reshape into a sealed ball.

Coat each ball in flour, then dip into the egg, and finally roll in the seasoned breadcrumbs until fully coated.

Heat oil in a deep pan over medium heat. Fry the balls in batches until golden brown and crisp on all sides.

Remove and drain on paper towels. Sprinkle with chopped parsley and serve warm.
