Method

  1. Heat oil in a large frying pan over medium heat. Add bacon and fry for about 3 minutes until crisp. Remove from the pan leaving oil behind.
  2. Add onion, capsicum and garlic and fry for 5 minutes, then add corn and smoked paprika and continue to cook for a further 5 minutes.
  3. Meanwhile, in a pot of boiling salted water, cook pasta as per packet directions.
  4. Once pasta is cooked, transfer to the pan with the corn, add bacon and parmesan and toss together with as much of the water as you need to create a sauce.
  5. To finish add pepper and top with parsley and extra parmesan.
  6. Serve and enjoy with family and friends!
