1. Preheat oven to 190°C.
  2. Place chickpeas, tomatoes, onion, garlic, ricotta and olives in an oven tray.
  3. Drizzle with olive oil, season with salt & pepper and bake for 10 minutes.
  4. Meanwhile, in a pot of boiling salted water, cook pasta as per packet instructions.
  5. Add cooked pasta to the oven tray and mix through. Garnish with parsley and parmesan.
  6. Serve and enjoy with family and friends!
