1. For the meatballs, heat a small frypan over medium heat. Add onion, garlic and thyme and sauté until softened. Allow to cool.
  2. Place remaining meatball ingredients into a medium bowl, add onion mixture and combine, Roll into small bite sized meatballs. Place in the refrigerator.
  3. Heat a medium saucepan over medium heat. Add olive oil, onion, leek and celery and sauté until softened.
  4. Add stock, milk and season with salt & pepper.
  5. Bring to the boil, add pasta, broccolini, beans and meatballs and simmer until the pasta, vegetables and meatballs are cooked.
  6. To finish drizzled soup with olive oil and sprinkled with parmesan and parsley.
  7. Serve and enjoy with family and friends!
