1. In a pot of boiling salted water, cook pasta as per packet directions. Refresh the pasta under cold running water, drain well, toss in olive oil and place in a medium bowl.
  2. Meanwhile, make the dressing. Place all dressing ingredients into a jar with a tight fitting lid and shake well to emulsify.
  3. Add cherry tomatoes, cucumber, borlotti beans, red onion and rocket into the bowl of pasta.
  4. Season with salt and pepper, pour over the dressing and toss well to mix.
  5. Serve the pasta salad garnished with crumbled feta.
