1. In a pot of boiling salted water, add pasta and cook as per packet directions.
  2. Heat oil and garlic in a large pan. Add tomatoes and cook on a medium to high heat for 5 minutes, stirring occasionally, or until the tomatoes start to collapse.
  3. Reduce heat to low and add 2 cups of pasta water to the pan and cook for a further 5 minutes.
  4. Remove garlic, add rocket and basil into the pan and stir.
  5. Strain cooked pasta, add to pan and mix.
  6. Place mozzarella all over the top of pasta and cover with a lid and turn off the heat.
  7. Allow to mozzarella to melt for 2 to 3 minutes.
  8. Serve and enjoy with family and friends!
