1. In a small pot, bring stock to the boil. Place couscous into a bowl, pour stock over the couscous and cover with cling wrap. Set aside for 10 minutes to absorb.
  2. Meanwhile, make the dressing – combine all dressing ingredients in a bowl until combined.
  3. Remove wrap from the couscous and using a folk, run the folk across the couscous to fluff.
  4. Add all remaining ingredients to the couscous and mix.
  5. Drizzle dressing over the top and combine.
  6. Serve on a large platter.
  7. Enjoy with family and friends.
