1. Prepare CousCous as per packet instructions. Once cooked, fluff with a fork and set aside.
  2. Place 2 cups of ice into a large bowl of water.
  3. Add asparagus to the boiling water and simmer for 30 seconds, then remove and place into the ice bath.
  4. Repeat with broad beans and peas.
  5. Strain vegetables and add to the CousCous with herbs, red onion and feta.
  6. Season with salt and pepper and dress with olive oil and lemon juice.
  7. Mix well and spoon into a serving bowl and sprinkle with chopped pistachio.
  8. Serve and enjoy with family and friends!
