For the Dressing:


  1. To make the dressing. Place all ingredients into a bowl and mix until a smooth consistency is reached. Set aside.
  2. Place couscous into a large bowl and bring stock to the boil.
  3. Pour stock over couscous and cover with cling wrap. Set aside for 10 mins.
  4. Remove cling wrap fluff couscous with a fork to separate the grains.
  5. Add all ingredients, except the chia seeds, into the bowl with the couscous, season with salt and pepper and mix well.
  6. Pour dressing over the top and garnish with chia seeds.
  7. Serve and enjoy with family and friends.
